To the patch we go, to find the perfect pumpkins to stab open, spill their guts and carve a creepy face into! I don’t know what pumpkins ever did to us, but we sure like to torture those beautiful orange squashes!
This year, I would recommend that you don’t just purge the seeds. If you skip the carving project altogether, I would highly recommend stabbing a squash anyway. They are a nutritional goldmine! If you cut an acorn squash in half, and roast it in the oven, adding just a tiny bit of butter and brown sugar, you will add tons of Vitamin C, Vitamin A, and even some calcium and iron to your daily intake.
